For the 7th edition of the Chefs du 934 dinners, the Consulate General of France in New York welcomed the chef and owner of Maison Hugo, Florian Hugo. Originally from Provence, former chef and manager at Brasserie Cognac and Cognac East, student of Alain Ducasse and Paul Bocuse, Florian Hugo now has his own restaurant in the Upper East Side.

The evening’s menu:

Scottish Seas Salmon with Dill
seaweed caviar, tender green salad, served with a delicate dill sauce

Line-caught Bass
razor clams gratin, caramelized fennel, calamari, candied lemon, “green” sauce

**
Hudson Valley Spring Chicken
stuffed with foie gras and chanterelles, Port & Sherry sauce

Strawberry Soup
ginger infusion, orange tuile biscuit, Mascarpone sorbet

Chef Hugo’s fantastic menu was accompanied by wines of southern France. The dinner began with wine from Domaines les Hautes Cances, courtesy of Anne-Marie and Jean-Marie Astart and continued with two wines from Chateau Margui, courtesy of Marie and Philippe Guillanton, and a wine from Domaine des Haut Chassis, courtesy of Franck Faugier. The meal ended with a muscat from Domaine de La Coume du Roy, courtesy of Jean-Francois and Agnes Bachelet. The sommelier for the evening was Bradley Cohen.



The Consulate General of France in New York organizes 4 dinners a year to help give exposure to talented French chefs who have opened restaurants in New York, as well as to French winemakers.


The chefs and winemakers are selected by the Chefs du 934 organizing committee composed of:
• Mr. Bertrand Lortholary, Consul General of France in New York
• Mr. Eric Ripert, Chef and Co-Owner of Bernardin
• Mr. George Sape, Managing Director at Epstein Becker & Green, Maître International Business and Wine Society New York
• Mr. Omar Khan, Founder and Senior Partner at Sensei International, International President of Business and Wine Society
